Easy Stock

Making stock is very easy and  a great way to use up any old left over veg in the bottom of your crisper! We used up left over chicken bones/skin but you can just leave out for a vegetable stock. Celery- you can use the tops as well Onions Garlic Carrot Parsley Salt Pepper Bay leaves   I use our Bamboo produce bag to put all the ingredients inside.  This way once we have our stock we can just pull out the bag and dispose of the left overs straight into the bin. Cranberry Choc Bliss Balls

I love Bliss Balls as the varieties are endless and you can play around with so many flavours. 3/4 cup of dried cranberries 1 cup shredded coconut 4 – 5 fresh mejool dates (pitted) Can add more to make sweeter. 1 cup walnuts 1 cup pistachio’s 1 dessert spoon of cacao 1 teaspoon vanilla Blitz together dates and nuts until coarsely chopped. Mulberry Muffins

We have this gorgeous Mulberry Tree and always end up with so many berries and what to do with them all. Most are used in smoothies but thought I would experiment and add into a muffin mix.  As mentioned I am no chef  but these were a huge hit in our house.  Kids enjoyed taking to school in our snack pockets.  Where possible try and use organic ingredients. Nut Milk- 3 easy steps

1.  Cover 1 cup of almonds in water and soak for at least 8 hours or overnight. If pressed for time you can  cover in boiling water and soak for an hour. 2. Drain almonds, add to blender. This combination is amazing.  Growing up I always said no to anything that contained Papaya due to the smell. I have since come to appreciate just how amazing this fruit is on it’s own and also together with other ingredients. Easy Magic Bean Cake- Clever Cook

Cannot believe how delicious this cake is and that it contains kidney beans! A great healthy treat for young or old. Easy Choc Cookies

These cookies are made nearly every week and kept in the freezer for during the week and lunch box treats. Again it is a throw it together kind of recipe after years of following other step by step I have found what works for us and mostly what I have in the cupboard! I had no idea how easy these were to make! I use whatever is in the cupboard and they always taste great. So if you don’t have exactly what I use just exchange it for something else you have or take out. You cannot go wrong with making these balls.
